Gluten consists of the proteins gliadin and glutenin. Gluten has been found to be the protein-containing portion of certain grains such as wheat, rye, oats and barley. Finally there are three different amylases in this formulation to provide for the complete breakdown of starch allowing the proteases greater access to gluten.
